Pasture/Forest Raised Pork
We are raising Berkshire pigs. They are an old fashioned heritage breed of pig. They have been called by chefs around the world the "gold standard" of pork. When they are allowed to live stress free lives in the great outdoors their meat becomes well marbled. This creates a meat that is naturally juicy, succulently flavourful with exceptional texture.
We move our pigs around the fields and forests during the spring, summer and autumn seasons. They are allowed to express their "pigness" by digging for roots in the ground or grazing the plants that grow there. Winter will find them closer to the yard. They then get a ration of mixed grains and hay.
The pigs we are raising for meat are fed a mixture of wheat, peas and oats. They also receive a daily pail of skimmed milk that is leftover from butter making, fresh buttermilk or whey from our home cheese-making. All these milk products come from our grass-fed milk cows. By feeding these excess milk products to our fattening pigs we are able to provide a good source of protein and vitamins to them. Not only are these milk products good for them, it is said to promote tenderness and exceptionally great flavoured meat.
